Garlic Scape Pesto

Pesto can be as simple as a puree of raw garlic scapes with olive oil, a touch of lemon juice, and sea salt. The green color comes purely from the scapes, which are the flower of the garlic plant. Each plant only has one flower and they are usually in season briefly from late June-early July. Our pesto has a nice garlicky punch to it-- a little will go a long way! We usually make our pesto fresh the day before the farmer's market, and it will last at least 4 weeks in the fridge. But we bet you'll eat it before then anyway, since it's delicious to eat it on bread, in an omelette, tossed with pasta, or chicken, or as a condiment.

Cooking Suggestion: Slice sausage into thick 'quarters'. Saute slowly until well cooked. Just before serving drizzle the sausage with a little maple syrup (we like the B grade for flavor). Keep heat on low to prevent burning (you can add a little water if needed) and stir until sausage is well coated. Serve with pasta and greens (sauteed chard and collards are our favorite). Enjoy!

Our eggs are certified organic through NOFA-VT. The different breeds of chickens lay different color eggs, so you will find brown, green and white eggs in the same carton! The hens live on the pastures from late spring to early fall and are moved up to our barn yard for the winter. Depending on the season and the hens choice of food, the yolks will range from yellow to a deep orange. We work hard to give them as much local grain as possible; grinding corn and soy (New York when possible) with a local small grain mix (Shoreham).
