Garlic Scape Pesto

Pesto can be as simple as a puree of raw garlic scapes with olive oil, a touch of lemon juice, and sea salt. The green color comes purely from the scapes, which are the flower of the garlic plant. Each plant only has one flower and they are usually in season briefly from late June-early July. Our pesto has a nice garlicky punch to it-- a little will go a long way! We usually make our pesto fresh the day before the farmer's market, and it will last at least 4 weeks in the fridge. But we bet you'll eat it before then anyway, since it's delicious to eat it on bread, in an omelette, tossed with pasta, or chicken, or as a condiment.
